Christmas Limas

For those of you who may have missed the December 4, 2010 article in The Statesman on Christmas limas by Renee Studebaker, I thought I would write a short synopsis. She makes them sound delicious. Christmas limas grow in a green pod and inside are big shiny red and white beans. After they are cooked, they taste creamy and nutty. They grow on long vines (up to 10 feet) and continue blooming and making pods until the first freeze. They should be planted in a sunny location in the spring and have a trellis or poles for support. A couple seed sources are Rancho Gordo and Seed Savers Exchange, and the packets are usually less than $3.00 each. They are known as Phaseolus lunatus, Christmas limas, giant speckled pole beans, calicos, or chestnut limas.
